Beta glucans
Beta glucans are a family of large molecules composed of glucose chains. They are found in many organisms: cell walls of various bacteria and yeasts, grain husks, mushrooms traditionally used in China and Japan. They are attributed various properties. For example, J. Czop's research in the late 1980s led to the discovery of a specific receptor for beta-glucans on the surface of certain cells of the immune system. Not all beta glucans have the same activity: the best-known forms are beta-1,3-glucans and beta-1,3/1,6-glucans, which are found in maize cake and yeast (especially the baker's yeast Saccharomyces cerevisiae).
